Meet Molly Fallon Dixon, MS, RDN – Passionate Community Nutrition Advocate

 Molly Dixon, MS, RDN is a trailblazer in community nutrition. From pediatric nutrition education at the start of her career to increasing food access to diverse populations, her current role as Director of Food Access and Social Impact at RWJ Barnabas Health highlights what she is most passionate about – supporting nutrition through the life span.

Molly believes that healthy food access is a fundamental human right and we can all play a small role in creating a better food system that works for everyone.  She earned her bachelor’s degree in Nutrition and Dietetics from The University of Delaware, completed her dietetic internship with the University of Medicine and Dentistry of NJ and her MS in Health Science with a concentration in Health Coaching from Rutgers University.

Love For Her Craft & Community Nutrition

As Director of Food Access and Social Impact, “I have the privilege of leading an amazing team of RD’s, Food Access Coordinators and Greenhouse staff that help make healthy food more accessible for the communities we serve.  Together we run Food Farmacies, inclusive Farmers Markets, a hydroponic Greenhouse and provide nutrition and culinary education to our patients and neighbors.“

Molly’s favorite aspect of community nutrition is the variety:

“Every day is different; you may be teaching a cooking class for children one day and running a farmers market the next.  It is truly the best field of dietetics for people who like variety in their day, working with different groups of people, staying on trend with the latest research/media and more.“

Inspired Action!

Molly is inspired by the vital work people and organizations are doing to fight hunger. NJ is the first state to develop an Office of the Food Security Advocate, first to commit to a $95 minimum monthly SNAP benefit, the home to advocacy groups like Hunger Free NJ and the Food Democracy Collaborative as well as five Feeding America network food banks and a long list of grassroots organizations.

Molly’s favorite quote connects well with her excitement around those who inspire her in the community:

Many hands make light work.  The work we all do to combat food insecurity in our communities relies on a vast network of partners from healthcare to emergency feeding organizations to farmers, schools and more.  We have to work together to move the needle and make lasting change to our food system.”

Molly’s Message to Students Considering Dietetics
“Do it!  Dietetics is so unique in that there are many career paths within the field.  From clinical to culinary, community nutrition education, academics, sports nutrition and ton of other sub-specialties; choosing dietetics is just the first step to finding your niche where you can make the biggest impact on your patients and community members.

So often the challenges our patients face begin with basic lack of access to healthy foods, healthcare and transportation.  Dietetics has taught me to start with the basics and build up from there.”

 Connecting Personal and Professional

It’s fascinating to understand how someone is lead to the field of dietetics, and with Molly it’s no different. From childhood to being a parent – food and nutrition play a pivotal role in her life.

Molly loves to cook!  Watching and helping her grandmother cook during childhood played a huge part in her career. Molly made healthy twists to some of her grandmother’s classic recipes in a lot of the cooking classes she taught early on.

Molly’s son was diagnosed with Celiac Disease about a year ago and gluten free cooking has been a huge change she is embracing.  This summer she had fun growing her first full on garden at home successfully growing and harvesting tomatoes, peppers, lettuces, herbs and kale. “My zucchini and strawberries were a flop, I’m excited to try out some new things next year!”

Molly believes that healthy food access is a fundamental human right and we can all play a small role in creating a better food system that works for everyone.  Molly is also the proud mom of two young boys who only sometimes love their vegetables as much as she does.

Just for Fun

Molly was born and raised in Jersey and hasn’t strayed too far over the years!  Being a Jersey native keeps her really connected to the work she and her team do, knowing it makes a difference for her friends and family too.  “Plus, who would move away from Jersey tomatoes, corn, blueberries and my favorite… everything bagels?!”

Molly loves that there are so many things to do in New Jersey.  Beaches, hiking trails, close to NYC and Philly, Jersey Fresh Farmers Markets, concert venues, agritourism and the list goes on.  She loves that New Jersey experiences all the seasons, “although I could do with a little less winter.”
